Beef + Barley Soup

Check out one of our favorite winter time meals from momsdish.com.

Nothing hits the spot quite like a warm bowl of soup on a wintery day. This recipe is on regular rotation in our house for several reasons.

For one, it's incredibly simple. I opt to toss everything into the crockpot in the morning, top with bone broth, and dinner is done!

Second, if you're trying to eat based on what is available seasonally, it's a great choice. Hearty beef, root vegetables, a quality grain, and nourishing broth make for an affordable meal with easy-to-source local ingredients.

Want to make it local?

Check out your local farmer's market or farm co-op. There are farmers out there who would love to supply your family with high quality ingredients, you just have to look around.

If you are in the Tulsa area, here are a few resources.

Stew meat - Big Grass Beef (available from theheirloomacre.com or biggrassbeef.com)

Mushrooms - swap out regular button mushrooms for a more unique variety from OK Mush Co. (sold at the Tulsa Farmer's Market.)

Broth - Beef Bone Broth (available from theheirloomacre.com)

Carrots - Grab a bundle from the farmer's market!
